Necessity is the mother of invention and it certainly rings true for this recipe! My mum’s nut allergy spurred me on to create a vegan, delicious and nutritious take on this staple comfort food so she wouldn’t be excluded. Mac n Cheese is such a ubiquitous meal that it was quite daunting coming up with a recipe that could match the dairy-rich Mac n Cheese we all know and love! As so many members of my family have their various allergies and intolerances, it became paramount to create a recipe that not only matched the creamy and cheesy taste and texture of Mac n Cheese but was also 100% free-from.

Vegan & Gluten-Free Tomato & Red Lentil Soup
Our Tomato & Red Lentil soup is always a family favourite. There’s something so comforting and familiar about it. I think it’s the combination of a classic tomato flavour with the thick and creamy lentils that makes this soup perfection. For a lentil soup, this recipe works really well in hotter weather as it’s wonderfully refreshing and light.
Vegan Hey Pesto Pasta!
In these uncertain times, we at Soupologie want to give you, our loyal supporters, something you can rely on each day: a fun and delicious recipe for people who live alone, with friends or family. Our recipes freeze perfectly well and tend to use ingredients that you’ll have stored in your cupboards, fridge or freezer. This pesto pasta recipe uses green vegetables, rather than just herbs, for an extra veggie boost! Feel free to change up the green vegetables, I think spinach and green beans could work just as well – or any other veg you like! I like to use fusilli as my pasta of choice with pesto as the spirals of the pasta hold the sauce nicely.
Vegan French Apple Tart
A French Apple Tart is an excellent dessert to have up your sleeve – not literally, unless you like having soggy arms. But seriously, this Apple Tart is perfect for a last-minute dessert as it requires no pre-cooking of pastry or apples. It’s super quick to throw all the elements together and the finished result always looks professional and fancy!
Vegan Fresh Pasta – Orecchiette in an Aglio E Olio Sauce
Today we’re making fresh orecchiette! The meaning of orecchiette comes from orecchie meaning ear. Conversely, the suffix -ette just denotes that they’re small. So, we’re making fresh little ears! But seriously, this is one of the best pasta shapes to begin your pasta-making experience as it’s super easy to shape. The pasta dough itself only consists of 2 ingredients – semolina and water. You can use plain flour if you are unable to get your hands on semolina flour or 00 pasta flour. This dough does not use any eggs. So this recipe is suitable for vegans and egg-allergy sufferers!

You can never go wrong with pizza! It might seem like a worrying experience to make our 5 a day version from scratch, but you’ll be a pizzaiolo – pronounced pizza-yo-loh – (pizza maker) in no time! The ingredients and quantities in this recipe will ensure that you’ll get your 5 a day. So this popular comfort food is both tasty and nutritious! As with any pizza, feel free to go wild and decide your own toppings! Remember that one of your 5 day counts as 80g. Bear this in mind when it comes to incorporating other ingredients.
Vegan Hash Browns
Some days just require a full English breakfast to get going, and you can’t beat a generous helping of hash browns. And so, this recipe is super easy and quick to make! Also, I particularly like this recipe because it’s a fun and delicious treat for when you’re tired of mash, jacket, or roast potatoes.
